and the green beans of the season have arrived in full force…many many bushels picked already….

 

Here are so tips for freezing up these guys to enjoy all winter long…

    first you must pick enough to big up…. I did a half bushel here

 

 

 

                                                                                                   Then just pop off the top and bottom of each bean…

 

Next add them to a boiling pot of water… only leave in the boiling water for three minutes… remove them and then toss them into a bowl filled with cold ice water to stop them from cooking…… drain them… and put them in freezer bags…

 

 

 

 

 

       I use a food sealer to suck all the air out and then seal the bag…

 

         Toss your final product into the freezer… they will keep all year until fresh  

         beans are ready next year..

Taco Dip Recpie

◊ Simple Taco Dip ◊

  • Sour Cream
  • Cream Cheese
  • Taco Dip Seasoning
  • Tomatoes
  • Cilantro
  • Peppers
  • Onions
  • Lettuce
  • Cheese
  • Hot Sauce

 

Mix the cream cheese and sour cream… add in the taco dip seasoning

Lay it in the bottom on the serving dish

Dice the Tomato, onions, cilantro, peppers , layer them on top of cream mixture

Shreed the lettuse , add it on top

Dash with hot sauce if desired

Sprinkle shredded cheese on top!!!

Use chips to dip and enjoy…

Simple Salad Dressing

With all the delicious Lettuces in your bags, I thought you might like a delicious Salad Dressing Recipe

  • You will need:
  • Quality Olive Oil
  • White Vinegar
  • Honey Dejion Mustard
  • Salt/Pepper
  • Any of the delicious Herbs from your bag… Thyme, Basil or Oregano this week

 

In a small dish put a tablespoon or so of olive oil and vinegar, then add a squirt of the mustard, dash of salt and pepper then chop up your chosen herb real fine and add it to the mix…. Stir it all together , and there you have it!

What a super busy weekend working in the fields. There is nothing more that my father would like to do but spend Father’ Day working in the gardens… Well we worked all day Saturday, and then Sunday morning, so there was still plenty of time for him to enjoy the pond Sunday Afternoon…..

Got everything hoed and all week free… All the lettuces are up and look amazing… Planted some more lettuces, carrots, and beets yesterday. On Saturday transplanted some more fancy pumpkins and bird house gourds. We have lots of amazing looking basil, parsley, thyme and oregano.  CSA members get excited for cooking with some fresh herbs:)

Well hello

With this burst of great weather we have lots of new things in the ground… 200 pounds of seed potatoes:) 144 tomato plants 106 pepper plants… 48 eggplant… 48 green cabbage… 28 red cabbage….. 48 broccoli….48 cauliflower… lots of leeks, onions herbs and lettuces doing great…. everything is just a little later this year with all the rain early on….
