PortorHouse Steak on a Bed of Spinach with a side of Crispy Potatoes

  • Spinach
  • One Porter House Steak
  • White Potatoes
  • Balsamic Vinegar
  • Garlic
  • Oliver Oil

 

First prepare the potaotes, slice very thin, in a frying pan add a touch of oil… then garlic to brown, place in the potatoes and cook until they are crispy, add salt if you would like

Then in the same pan prepare the steak

Plate it all together on top of the spinach, and add a splash of Balsamic Vinegar

Dinner for two for all under $10.00

Harvest Squash

Cut the squash in half, and discover that beautiful yellow orange color… scoop out the seeds, they are delicious to save and roast as well…. then lay them on to a baking sheet…

 

 

drizzle on some Meyer Maple Syrup…. for a extra natural dose of sweetness

then roast these little guys in the oven and delish results will be yours… after their oven experience scoop out the insides and enjoy!!!

Stuffed Peppers Done Right

This beautiful little pepper surprise was waiting for me to enjoy on a perfect little plate… little did my stomach know what a  delightful surprise was in store for it….

 

 

 

 

 

 

 

     Inside of the pepper was a combination of fresh corn, black beans, kidney beans, lemon garlic orzo pasta,tomatoes, peppers, salsa, and onions, Darryl topped it off with the salsa and melted cheddar cheese and a touch of chopped fresh  basil….

 

 

it was hard to finish this whole pepper of delciousness all by myself but I managed…

First Day of School Dinner

This delicious feast was waiting for me when I got home from work on my First day of school this year….

Darryl took potatoes sliced really thin, added some tomatoes on top, chopped some garlic, added pepper and salt with a dash of chopped basil, tucked it all into time foil to place on the grill right next to some delicious t-bone and porterhouse steaks from Beef Oreo…

 

The results were delcious with a nice  bottle of fine red wine from our friend Doug Dahl…

Vinegar Cucumbers

You Will Need:

  • cucumbers
  • olive oil
  • purple onions
  • balsamic vinegar
  • salt and pepper

start with  few baby cucumbers..

then slice them through the food processor… toss the onions in the processor as well….then mix some olive oil, vinegar, salt and pepper… toss the onions and cucumbers in… and ENJOY!


Hot Pepper Relish

A seasonal favorite… this spicy treat is great with a block of cream cheese, add the Relish on top and heat in the oven until it’s all melted… serve warm with crackers and enjoy….

 

  • 4 cups of chopped peppers, I use two green bells, 4 hot red bulls, and lots of jalapenos
  • 1 cup of cider vinegar
  • 5 cups of sugar
  • one box of pectin, or 1/3 cup of dutch jell if you buy it in bulk

 

     Make sure you wear gloves when you cut all the  

     peppers, there is nothing worse then burning hands

     after making the relish…

 

 

 

 

Allow the peppers to cook down with the vinegar and pectin…. once they have come to a full rolling boil, add in the sugar… then continue to stir until it returns to a full rolling boil, and boil for one minutes then remove from the heat… using a canning funnel and your prepared jars put the relish into the jars and seal….

 

 

 

 

 

 

 

    After you add the sugar make sure to mix well ….

Swiss Chard Spicy Chicken Salad

It all begins with chopped Swiss chard, leeks, hot peppers and purple onion…

then cook breaded chicken breast and a few french fries…

make small goat cheese packages by layering filo dough and filling them with goat cheese.. bake with the chicken fingers

Remove it all from the oven, chop chicken fingers and shake in hot sauce… layer it all nicely on to a plate…  put the goat cheese on top and splash with blue cheese

 

                                                     The final product… so delicious!!!

 

 

 

 

 

Basil and Parmesan Scones

  • 2 cups King Arthur Unbleached Bread Flour
  • 1 tablespoon baking powder
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 2 tablespoons finely chopped fresh basil
  • 1/4 cup (1/2 stick) cold butter, cut in pieces
  • 2 large eggs (1 separated, white reserved for glaze) 
  • 1/2 cup 2% Milk
  • additional Parmesan cheese

In a bowl, mix together flour, baking powder, cheese, salt and basil.

Add the pieces of butter, cut them into the flour using two knives, till the mixture forms even crumbs.

Fresh grated Parmesan cheese

 

 

 

 

 

 

 

 

Beat together 1 whole egg, 1 egg yolk, and the milk

Stir using your hands into dry mixture till the dough clings together
Turn dough onto a well floured surface and pat into a   

                                                                                                 1/2-inch-thick shape

Using a circle cutter, cut out circles… re pat into shape and make little balls

 Transfer scones to a parchment-lined baking sheet

Whisk reserved egg white vigorously, till it becomes somewhat fluffy

Brush each scone with egg white, and sprinkle with some additional Parmesan

Bake scones in a preheated 450°F oven for 10 minutes, or until light golden brown.

Remove from oven and cool on a wire rack

 

The final product Basil Parmesan Scone… Delicious with a glass of milk…. or dipped into a summer soup

Sage Potatoes and Beans

And we have Darryl to thank for today’s Recipe…

These are the steps as stated by him…

First lay out some tin foil, and put some olive oil, salt, and lots of pepper (or a little depending on how much you love pepper, Darryl thinks everything is better with lots of pepper)

Scrub and clean your fresh dug red potatoes and snap the ends of your beans

Lay the veggies on the foil and then crush up some Sage; sprinkle it on top

Dice up a clove of garlic add it on top

Next in a very artful fashion fold up your tinfoil into a little tent

Place the tent on the grill for 15 minutes

Open the tent very carefully there will be lots of stream from the veggies

ENJOY!!!

Perfect Potatoes

   The fresh Red Potatoes are ready to be dug…..

  Here is a super simple way I make a side dish out of them…

  Scrub them clean in the sink under water

  Fill a pot of boiling water and cook the potatoes until they are soft

  While they are cooking; in the food processor add onions, garlic, a little butter, and some of your favorite herbs…. in this picture I added basil, and cilantro….

 Blend up those, and then add the potatoes when they are done cooking, add some   milk to smooth them out and a touch of salt and pepper to taste…

  Done and done …. serve and enjoy!!!
